Stop Asking What to Cook—It’s Tamales

Tamales are my favorite winter move. They’re cozy without being boring, a little project-y without becoming a full personality trait. Perfect for a night in alone or for feeding people you actually like. They feel special—but not precious. Like: yes, we’re cooking, but we’re also wearing socks and drinking wine.

They’re also wildly flexible. You can absolutely use leftovers, but if you want guidance, these are my two forever fillings:

  • Veggie: caramelized onion, mushroom, and roasted sweet potato

  • Chicken: Instant Pot adobo chicken, shredded and saucy

Below is a streamlined, totally doable approach—no abuela gatekeeping, no all-day commitment.


The Game Plan (Read This First)

  1. Soak the husks

  2. Make the masa

  3. Assemble

  4. Steam

  5. That’s it. No drama.
