You can all thank my dear friend Willa for this delightful winter surprise of a recipe! Recently, she texted me asking for my Piña Colada recipe, and I couldn't resist sharing it with everyone.
A few years ago, during the pandemic, I found myself stationed on my farm in Upstate New York, staying in one of the charming farmhouses with a few friends—who just happened to be a gaggle of 28-32-year-old men who needed to escape NYC at the time. It was around this time of year, and our days were filled with cooking, riding dirt bikes, gathering around bonfires, hunting for vintage cars, whipping up more delicious meals, and shooting clays. It felt like summer camp for grown-ups!
One day, while exploring the farmlands, we stumbled upon the only restaurant open at the time—a rather random Indian joint. Curiously, I glanced at the menu and, for reasons I still can't fully explain, ordered their Piña Colada. Normally, I’d stick water , but that day was different.
When the drink arrived, I took one sip and instantly regretted my choice. It was so sweet that I could hardly stand it. Yet, that moment sparked my quest for the perfect Piña Colada. My mission? To craft a version that was just as delicious but without the cloying syrup and sugary alcohol that so often plague traditional recipes.
With a houseful of test subjects eager to join my Piña Colada journey in the middle of February, we set to work. What started as a simple smoothie evolved into something truly special. By adding fresh mint, we elevated the drink to a whole new level.
